The extra virgin olive oil of Fratelli Pinna

OUR OIL

The olives harvested in our olive groves and immediately cold-pressed in the hills just outside Sassari give us our three extra virgin oils : Antichi Uliveti del prato, Denocciolato di Bosana and Maccia d’Agliastru .

For the production of extra virgin oil, we use our own oil press characterized by a continuous two-stage cycle system that works in total absence of oxygen.

The extra virgin olive oil is obtained by pressing the pulp of the olives after removing the core.

Why is it pitted? Several studies published in the most authoritative scientific journals have established that the crushing of the pulp without the kernel prevents the enzymes contained in the kernel from coming into contact with the pulp

The final product is much more stable over time and rich in phenolic substances, fatty acids and vitamins, all natural components that provide benefits to our body, prevent aging, cardiovascular and intestinal diseases.

The kernel become biomass and thus energy.

The oil to be excellent must be produced in compliance with the following rules: harvesting of olives at the beginning of the maceration and second cultivar, extracting it from the pulp after very few hours.

The control of the production chain of an agri-food product must be traceable, that is, it must be documented throughout the entire production chain.

Antichi uliveti del prato

Intense golden yellow with green notes, the nose presents elegant and complex fruity notes, with clear references to exotic fruit, apple and Mediterranean flowers. It is soft on the palate, has good fluidity, with bitter and spicy in good evidence but never disharmonious. Well suited to delicate dishes. Ideal for raw with vegetable soups, fish and grilled meats.

Denocciolato di bosana

The denocciolato oil has a lower acidity and a content of polyphenols almost double than a traditional oil with stone. The color is soft and clear golden yellow; it has aromas as soft and delicate of olive with notes of white fruit that recall banana and apple. Harmonious and balanced taste, although with very strong and marked fruity sensations, as well as persistent and clear even at the end, it is distinguished by elegance and finesse.
The bitter and spicy, strong and balanced sensation, combined with the good fluidity, make it pleasant to the palate. Suitable for starters and first courses of sea; excellent on legumes, vegetables, roasts and grilled meat.

Maccia d’Agliastru

Pale golden yellow colour; it has a delicate and subtle olive aroma, with notes of white fruit reminiscent of banana and apple. Harmonious and balanced taste, although with very strong and marked fruity sensations, it is distinguished by elegance and finesse. Suitable for starters and seafood dishes; excellent on legumes, meat and vegetables.
